My favorite time of year is right around Thanksgiving when I start making my holiday baking plans. And what’s not to love about Thanksgiving? Great food, time with family, and football (Go Pack Go!).
One of my favorite recipes to make every holiday season is my mom’s cream cheese sugar cookies. They are oh so heavenly and fun to make with friends and family. They do require some effort, but the end result is well worth it.
The best part is they freeze really well so you can make them ahead and throw them in the freezer for a few weeks and have them on hand when you go to holiday parties.
Cream Cheese Sugar Cookie Recipe
This recipe makes three dozen very small cutouts. I usually double the recipe to make enough for friends and family.
Ingredients
- 1 cup butter, softened
- 4 oz cream cheese, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla
- 2 cups all purpose flour
- 1/4 teaspoon salt
Directions
- Cream the butter, cream cheese, and sugar until light and fluffy.
- Beat in egg and vanilla.
- Combine flour and salt in separate bowl.
- Gradually add flour to creamed mixture and mix well.
- Cover and refrigerate for 1 – 2 hours until firm (I usually put it in the fridge overnight).
- On floured surface roll out dough to 1/4 inch. Roll to a 1/2 inch thick for a bigger thicker cookie.
- Cut with floured cookie cutter
- Place 1 inch apart on greased cookie sheets
- Bake at 375° F for 6-8 minutes until lightly browned (If larger cookies, bake a little bit longer).
- Cool for a few minutes before removing from pan to wire rack to cool.
Let your cookies cool fully before frosting.
Royal Icing Recipe
This icing recipe is one I’ve been using for years courtesy of AllRecipes. It makes for a really nice, thin layer of frosting that isn’t overly sweet.
Ingredients
- 1 cup confectioners’ sugar
- 2 teaspoons milk
- 2 teaspoons light corn syrup
- ¼ teaspoon almond extract (swap out with another extract to mix it up)
Directions
- Mix all of the ingredients together in a bowl.
- Add more milk to reach your desired thickness.
- Frost!
If you want to use a variety of frosting colors, mix in a little food coloring and get creative.
The frosting does dry fairly quickly so be ready to add on any additional sprinkles or toppings immediately after frosting.
